If I'm sanding a ball back then generally I use 800 grit. However you can always start with 1200 and change it depending on the reaction you're getting from the ball.

Ebonite has a product called Abralon. They are circular sanding pads that are available in a range of grits from very course right up to 5000 grit. The pads are very easy to use and will last much longer than sandpaper.
As Daniel said, you can always alter the surface to achieve the desired reaction. A rougher surface will hook earlier and a smoother surface will hook later.
